This is a busy time of year for families and who feels like going out to eat on busy evenings!?  I have a stash of quick beef dinners that I use this time of year and a lot of them contain beef for a few reasons.   First of all, beef is affordable and almost always on sale, my family will eat beef so that’s a plus and it’s so easy to make.  I like to buy a few pounds of beef at a time and brown it all ahead of time then freeze in one-pound bags.  Then I can pull it out of the freezer and put it in the fridge in the morning and by the time I’m ready to cook dinner, it’s thawed and ready to go.   Then I can add it to my favorite recipes.

You can substitute ground chicken or turkey for most of these meals for a healthier version!

Korean Beef | Love Bakes Good Cakes – This is a quick and tasty rice-based dish that won’t leave you hanging on flavor!

30-Minute Taco Soup | Made to be a Momma – My family loves tacos so naturally when I found this recipe, I was thrilled to have a new quick dinner to add to the list I knew everyone would love.

Hobo Packets | The Country Cook – I make these packets all the time but usually use chicken.  Throw whatever ingredients you enjoy in a piece of tin foil, throw the packs in the oven and you will have a cute personalized dinner for the whole family and it’s already wrapped up to be saved!

Wayne’s Beef Macaroni and Cheese | Food Network – My mom used to buy the canned version of this when I was younger and the whole family loved it. However, I can assure you, once we made this homemade version, we loved it even more.

Stuffed Zucchini| Katrina Runs for Food – I have never been a big fan of zucchini and hated that I didn’t like it since it’s so good for you.  I have found recipes like this one make zucchini taste way better, in my opinion, and makes for a quick and yummy meal that’s good for you and your family!
