I love making a recipe my own. Some of my family’s favorite meals are recipes I’ve tweaked to fit their likes. I’m also not one to always cook from scratch. Like you, I’m busy and don’t always have the time. So if I can turn a quick dinner into something even better, I’m all for it!
Traditional Shepard’s Pie is a favorite in my house. While it’s a pretty easy (and adaptable) recipe, it is a bit time-consuming and I don’t always have time to make it. So I came up with a quicker version of Shepard’s Pie that my family has come to love! I call it Shepard’s Pie Stroganoff because I use Hamburger Helper® Beef Stroganoff.
My oldest daughter hasn’t been feeling good and we were talking about what she’d like to have for dinner. She asked if I could make Shepard’s Pie Stroganoff. How can I resist when she’s sick. While I was at Walmart picking up her medicine, I grabbed some Hamburger Helper® Beef Stroganoff to make my easy dinner.
I already had the ground beef and some frozen veggies on hand. I like to use frozen veggies verses canned when I make this. Otherwise canned veggies seem to get to soft with the sauce. You don’t need the veggies right away, but I usually keep them on the counter to start to thaw.
The first thing I do is brown the ground beef. That takes no time at all. Make sure you drain the fat once it’s cooked! Here is a tip – cook a double batch of ground beef and freeze the rest for the next time! That makes all my Hamburger Helper® dishes even quicker to cook since the meat is done.
While the ground beef cooks, I like to get all my other ingredients measured out. The kids love to help with this part and sometimes fight over who will pour the milk! This recipe calls for hot water. I usually get that last so it stays hot. Another tip – mix the seasoning mix with the hot water with a whisk to make sure it all dissolves.
Before I started doing that, it would get clumpy in the pan and drive me crazy! Most of the Hamburger Helper® recipes that I make use hot water so I do this all the time.
Once the beef is cooked, add the milk, water with seasoning mix and pasta. Pretty much follow the recipe on the box. The veggies I add in go last because they are cooked. Otherwise they would get really soft and mushy. That’s one thing we don’t like – soft and mushy veggies! The crunchier the better.
Once everything is in the pan, bring it to a boil and then cover and simmer. It doesn’t take too long before the pasta is cooked and most of the liquid is absorbed. I love how this cooks in one pan… less clean up, which is what I look for in a quick dinner!
When most of the liquid is absorbed, I add the peas and the corn. I mix that in well and then let it cook for about 5 more minutes to pretty much warm them up. Like I said, we like the veggies to be crisp, if you prefer them another way, you could cook it longer or add them sooner.
That’s all! It’s so simple and delicious! I like to serve this with a salad and some nice fresh rolls. It’s a nice balance of protein, carbs and veggies. And my family loves it.
