Stubb’s Slow Cooker Chicken Tortilla Casserole for the Superbowl

Looking for Superbowl recipes?  Serve up Stubb’s Slow Cooker Chicken Tortilla Casserole for the Superbowl!  Stubb’s makes a variety of sauces and marinades to flavor your beef, pork and poultry and we are a big fan of their products.  My husband doesn’t like BBQ anything but these are not limited to just BBQ Sauce – They have Bar-B-Q sauces, marinades and rubs!

This isn’t the first time I’ve written about Stubb’s so it’s a product you know I like!

If you have some leftover chicken hanging around in your fridge, you can easily whip up this Slow Cooker Chicken Tortilla Casserole with Stubb’s Green Chile Marinade for your Superbowl get together this weekend!   It calls for an entire rotisserie chicken but you can use left over chicken breasts as well.   This looks super way to make and I but your guests will love it!  Serve some nacho chips along side or make some mini tacos.  Anything Mexican is always a hit in my house!

Stubb’s Slow Cooker Chicken Tortilla Casserole

Ingredients

1 rotisserie chicken, shredded
1 cup Stubb’s® Green Chile Marinade
1 ½ cups sour cream
1 15 oz. can black beans, drained and rinsed
2 cups shredded cheddar jack cheese
12 corn tortillas, torn into 1” strips
Non-stick cooking spray

Special Equipment: 4-quart Slow Cooker (or larger)

Cooking Instructions

  1. In a medium bowl, mix sour cream and Stubb’s Green Chile Marinade.
  2. Spray a 4-quart slow cooker with cooking spray. Coat the bottom of the slow cooker with ¼ cup sour cream sauce. Top with a third of the tortilla strips, followed by a third of the chicken, beans, sour cream sauce, and cheese. Repeat layers twice.
  3. Cover and cook on low for 5 to 6 hours. Serve with additional garnishments if desired: sour cream, cheese, tomatoes, guacamole, etc.

And how about a simple BBQ Onion Dip?  Just add 1/2 cup Stubb’s Original or Spicy Bar-B-Q Sauce to 1 container (16 oz.) sour cream and 1 envelope dry onion soup mix!   Serve with veggies or chips!
