Even though I am almost 100% Italian,  I love making Mexican dishes.  Especially Tacos, Burritos, Enchiladas, Quesidillas and Chili!   We probably make a Mexican dish at least once a week. This week was one of my favorites,  Cheesy Beef and Black Bean Burritos. These are so easy to make and so good. This recipe uses my homemade taco seasoning. I make it ahead of time in bulk. You will only use 3 tablespoons for this recipe. Start off by sautéing 1 small onion in a little olive oil. Cook for about 5 minutes then add 1 pound of ground beef.   This is a busy time of year for families and who feels like going out to eat on busy evenings!?  I have a stash of quick beef dinners that I use this time of year and a lot of them contain beef for a few reasons.   First of all, beef is affordable and almost always on sale, my family will eat beef so that's a plus and it's so easy to make.  I like to buy a few pounds of beef at a time and brown it all ahead of time then freeze in one-pound bags.  Then I can pull it out of the freezer and put it in the fridge in the morning and by the time I'm ready to cook dinner, it's thawed and ready to go.   Then I can add it to my favorite recipes.
