Jen from Savoring The Thyme is back this week with more delicious frugal recipes that include items that may be on sale at your stores.   All these recipes are featured on her blog, and besides a few guests post – she makes them all herself!   Hope you like her choices and let me know if you make any of them!

This week we will focus on a something that you probably have most of the ingredients for already in your cabinet and then you can add a yummy fruit or veggie that is on sale this week to it – muffins!

There is something about muffins that makes everyone smile: They are easy to make, comforting, fun and easy to carry however, they can also be very fattening and way overpriced.

As I stated above, muffins are dang easy and really, really inexpensive to make yourself. They are comprised of flour, sugar, baking soda/powder and as I will show you, should be filled with fruits and vegetables. As a bonus, you can consider them a breakfast, lunch or snack.

  •  Fruity Muffins: My Kiwi-Strawberry Muffins are so dang juicy and yummy, nobody will even ask what you put in them and with strawberries on sale, you will smile at the checkout.
  • Vegetable Muffins ala Sweet Potato-Zucchini Muffins: Yes, you will give these a try even though they have Sweet Potatoes & Zucchini in them. These bad boys take just like carrot cake. See, you are running to the kitchen now aren’t you?
  • Corn Muffins: These classics are made lighter, and with a bit of orange zest and chilies, your friends will start calling you Betty Crocker.
