My Thoughts: I used to enjoy cooking all the time, that was when I had more time.  Now there are some days where it seriously is a struggle to get dinner on the table.  That’s when I appreciate items like P.F. Chang’s Home Menu frozen entrees.  They are perfect for a quick meal and really yummy too!

Beef With Broccoli is by far my favorite.  I just love the combination of the two flavors and the sauce is awesome.  The night I made the Beef with Broccoli I added a salad and some baked potatoes I cooked in the microwave for a complete meal for the 4 of us!  So this 2 person meal I was able to stretch out to a 4 person meal by adding some side dishes to it.

Sweet & Sour Chicken was also a hit with my family though it wasn’t my husband’s preferred kind and he told me nicely that next time I make it to do it when he won’t be home for dinner.   But that’s OK, more for us!  I again served this one bag to my family of 4 by adding a salad and this time I made a side of white rice which again is super easy to make when you buy the minute rice kind.  Can you see how I like to cook quick things?!  The pineapple sweetened the sauce perfectly and we really enjoyed it.

We also tried the Shanghai Style Beef, but this one I made for just my husband and I on a little ‘date night’ at home.   We do that everyone and then when he works late and I feed the children before he gets home.  Then we give them something to do (a.k.a put in a DVD) and we enjoy dinner together.  Since it was just the two of us I made a salad and that was it.  We both enjoyed this sweet and savory beef and vegetable mix that was full of flavor.

They were all super easy to make and very little clean up was needed as the entire bag cooked in one skillet!  Less clean up is even better for busy days.

While we truly enjoyed these meals my only complaint is that the sodium is really high in most of them and they are high in points for Weight Watchers, which I’ve been following for the past 4 months.  But by adding the side dishes like I did, I was able to have a smaller portion which helps with the points and the sodium.  I made sure that everything else I made on the side was either salft free or low salt.

So even a quick  meal like this that’s pre-made and higher in sodium can be adjusted to be a little better for you family (if that is a concern of yours) and still quick, easy and yummy!
