For those of you that have been reading my blog for a while now, you know I’ve done a few giveaways for a Cook’s Ham and they’ve been extremely popular.  Well I’m excited to say that you will be seeing more Cook’s Ham giveaways in the comming months because they have generously offered to sponsor my trip to BlogHer 2010 in New York City this week!!!  I’m over the top excited and so grateful to them.

What I love about ham (besides how good it tastes!) is that there are so many ways you can use ham and for someone frugal like myself, you can buy one big ham and use it for several  meals if you are creative enough.  It’s a great way to make your dollar stretch and give your family variety.

Here is one of  my favorite recipes from Cook’s Ham.  I think it’s a great variation to the regular pasta salad that you may bring to a cook out.  The recipes calls for a ham steak, however if you have leftover ham from a larger piece, that will do!

Ham Steak Pasta Salad

Prep Time: 25 minutes
Total Time: 1 hour 25 minutes

Makes: 10 servings (1 cup each)

Ingredients

* * 1 Cook’s® Bone-in Ham Steak (about 1 pound)
* * 8 ounces dry mostaccioli, uncooked
* * 2 cups cherry tomatoes, halved
* * 1 cup broccoli florets
* * 1 small zucchini, thinly sliced (about 1 cup)
* * 1/2 cup sliced pitted ripe olives
* * 1/2 cup Italian dressing
* * 2 tablespoons grated Parmesan cheese

Preparation

1. Cook pasta according to package directions. Meanwhile, cook ham according to package directions.
2. Drain pasta; place in large bowl. Coarsely chop ham. Add to pasta along with the tomatoes, broccoli, zucchini, olives and dressing; toss lightly. Cover.
3. Refrigerate at least 1 hour, or until chilled. Sprinkle with cheese just before serving.
