With the cool weather in lots of areas right now, more families are staying in.  It’s a great time to work together in the kitchen and make some new creations, don’t you think?  Pizza is the perfect go-to for a family night in, quick appetizers for dinners with friends or a great starting slate for those leftovers from last night’s dinner – anytime of year!   Chef Mark is the man behind the Boboli Pizza recipes and he sent us a personalized recipe according to what we like.  However, when it came down to the time to make the pizza, we didn’t have all the ingredients so we worked with what we had on hand.   Next time I’ll prepare a little better.

We started out with a Boboli pizza shell, some roasted butternut squash, cheese, sauce and pesto.  Before you say ‘ewww’ – I didn’t combine all those ingredients together, we made two different pizzas – on the same pizza – half and half.  It worked out perfectly!

The butternut squash and pesto is a recipe from my friend Jen and once I made it, I loved it!!  Though I use a lot more pesto then she did!  My oldest loves pesto but not the butternut squash, so she takes that part off and eats the pizza with the pesto.  My youngest only likes cheese on her pizza so we compromised with this pizza.  But it totally worked out so well because the crust is already cooked, you just have to add your toppings and toss it in the oven for 8-10 minutes.  If you want a crispy crust you cook it directly on the rack, which is how I always do it.

But you can top a Boboli pizza crust with absolutely anything you like and they are perfect for letting the kids make their own pizzas too.  They also come in personal size pizza’s, whole wheat and thin crust as well.
