Even though I am almost 100% Italian,  I love making Mexican dishes.  Especially Tacos, Burritos, Enchiladas, Quesidillas and Chili!   We probably make a Mexican dish at least once a week.

This week was one of my favorites,  Cheesy Beef and Black Bean Burritos. These are so easy to make and so good.

This recipe uses my homemade taco seasoning. I make it ahead of time in bulk. You will only use 3 tablespoons for this recipe.

Start off by sautéing 1 small onion in a little olive oil. Cook for about 5 minutes then add 1 pound of ground beef. Cook through breaking it up as it cooks.

Drain the ground beef once it’s all cooked. Add 3 tablespoons of my homemade taco seasoning and 2/3 cup of water and cook until all the water is absorbed and the seasoning is mixed well. Put aside.

Open a can of Black beans and drain it but keep the liquid. DO NOT rinse them. In a small pot, cook the Black beans on low with half the liquid. Use a potato masher or the back of a spoon and mash half the beans as they cook.  Cook on low for about 10 mins until warm and bubbly. Remove from heat.

Take a burrito shell and spread a little of the bean mixture on the burrito.  Top that with some Beef then add cheese on top of that.  Fold the bottom up, the sides in, and roll it up. Put it in a greased 12 x 9 baking dish folded side down. Repeat 5 more times.

After you are done rolling them, open a can of Ro-Tel tomatoes and pour them over the top of the burritos. Then top generously with more cheese!

Bake at 475° for about 15- 20 minutes until the cheese is melted and a little bubbly.

Top with sour cream, olives, lettuce, or whatever you like.  Serve with a side of rice or salad.
