Good Cook Produce Keepers

As you know, I’ve been following the Nutrisystem program for almost 2 months now and I’m eating a lot of fruits and veggies so my fridge is always stocked well.   I’m finding out through trial and error how long I can actually keep the veggies in the fridge and how long they’ll last.  I’ve lost a few but learned along the way.

As part of the Good Cook Kitchen Expert program,  I received a box of Good Cook Produce Keepers to try out.  These containers won’t magically make your veggies and fruits last longer, but their life may be increased a bit more over a plastic bag!  Included in the box was a Citrus Keeper, Banana Keeper, Tomato Keeper, Pepper Keeper, Grapefruit Keeper, Asparagus Keeper and Cantaloupe Keeper.  I don’t eat all of those items but I did find use for them all.

The Cantaloupe keeper I found was great for keeping my lettuce fresh.  I normally purchase the lettuce in the bag because I hate to clean lettuce.  But on occasion I’ll buy some Iceberg Lettuce to add to the bag one.   Now while the iceberg lettuce will fit great inside the cantaloupe keeper, the bagged lettuce stays well in there too.  I was finding that if it took me more than 2 days to eat the bagged lettuce, it got funny.  But once I put it in the keeper, it stayed better for a few extra days.  This made me very happy because there is nothing worse than going to make a salad and finding out your lettuce has all wilted.

The citrus keeper is perfect for so many things besides lemon.  But if you cook with lemon, or lemon zest, it’s great to keep your lemon fresh for a longer amount of time then just a plastic bag.  I have been using my lemon keeper for my smaller onions!  It fits perfectly in there and keeps the onion smell out of my fridge.   But I would totally use this for a lemon if I had any lemons.  This summer we’ll be using more lemons because I like to put some slices in a pitcher of water for the girls when they are playing outside.

The grapefruit keeper is not only good for grapefruits, but oranges too!  Oranges are very high in sugar so I don’t always eat the entire orange at once.  So if I buy the biggest one I can find, then I can put the other half in the grapefruit keeper.  And it fits perfectly and doesn’t dry out.

The banana keeper I haven’t used yet because really we don’t eat half of a banana, it’s always the entire banana. But I’m determined to find a use for it.  And it’s cute too!

The Asparagus Keeper is probably my favorite one of all.  I love Asparagus but I hate to find out that it’s gone bad in my fridge.  It’s not always on sale so it’s not really cheap.  This Asparagus keeper is cute but also pretty awesome.  I bought some Asparagus and put it in there and a few days later went to cook it and it was still perfect.  Did you know you are supposed to store Asparagus standing up in your fridge?  You should always take it out of the bag (if you use one in the store) and store it standing up in a glass or an Asparagus Holder, with a little water on the bottom.  Out of laziness I don’t always do that but now I do since I have this handy-dandy Asparagus holder.

Don’t these look so pretty when they are full!  It really brightens up your refrigerator!

Good Cook Produce Keepers

Since I had all these yummy veggies in the house, I cooked up a delicious side dish to have for dinner.  I love to roast veggies and sometimes I grab whatever I have in the house and toss it in.   It always tastes slightly different but this one was especially yummy.   I used the following:

6 Asparagus stalks, chopped in about 1 inch pieces
1/4 cup onion chopped
1/2 cup red peppers chopped
6 cherry tomatoes chopped

I sprayed my pan with some Pam and seasoned them with Mrs. Dash Herb & Onion.   I put them in the oven at 375 and roasted them for about 30-45 minutes.  It depends on how crunchy or cooked you like your veggies.

This is what it looked like before it went into the oven.  If it weren’t for the uncooked asparagus, I might of just eaten this raw!  I now have an idea for a summer salad!

The peppers I bought were super sweet like candy and the tomato added some really good flavor to this.  I have never added any tomato to this mix and will probably do it more.
