Even though I am almost 100% Italian,  I love making Mexican dishes.  Especially Tacos, Burritos, Enchiladas, Quesidillas and Chili!   We probably make a Mexican dish at least once a week. This week was one of my favorites,  Cheesy Beef and Black Bean Burritos. These are so easy to make and so good. This recipe uses my homemade taco seasoning. I make it ahead of time in bulk. You will only use 3 tablespoons for this recipe. Start off by sautéing 1 small onion in a little olive oil. Cook for about 5 minutes then add 1 pound of ground beef.
